Ingredients
- 3 Cups old fashioned rolled oats
- 2 Cups of Whole Wheat Flour
- 1 Cup Light Brown Sugar
- 1 Cup Low-Fat milk
- 1 Cup Applesauce
- 2 Eggs
- 1/2 Tablespoon Baking Soda
- 1/2 Tablespoon Baking Powder
- 1 teaspoons Vanilla Extract
- 1 teaspoon Salt
- 2 Cups Fresh pears diced
- 3/4 Cup Dried Cranberries
- 3/4 Cup Roasted Walnuts
Instructions
- Preheat oven to 375.
- Prepare muffin tins with liners.
- Combine oats and milk in a bowl.
- Let stand for 10-15 minutes.
- Add the rest of the ingredients to the mixture.
- Fold in. Avoid over mixing.
- Refrigerate batter for 30 minutes.
- When ready to bake remove batter from refrigerator and fill muffin tin.
- Bake for approximately 20 minutes or until muffins have risen. Allow to cool.
