Homemade Blueberry Waffles

Ingredients

  • 3 Cups old fashioned rolled oats
  • 2 Cups of Whole Wheat Flour
  • 1 Cup Light Brown Sugar
  • 1 Cup Low-Fat milk
  • 1 Cup Applesauce
  • 2 Eggs
  • 1/2 Tablespoon Baking Soda
  • 1/2 Tablespoon Baking Powder
  • 1 teaspoons Vanilla Extract
  • 1 teaspoon Salt
  • 2 Cups Fresh pears diced
  • 3/4 Cup Dried Cranberries
  • 3/4 Cup Roasted Walnuts

Instructions

  • Preheat oven to 375. 
  • Prepare muffin tins with liners.
  • Combine oats and milk in a bowl.
  • Let stand for 10-15 minutes.
  • Add the rest of the ingredients to the mixture.
  • Fold in. Avoid over mixing.
  • Refrigerate batter for 30 minutes.
  • When ready to bake remove batter from refrigerator and fill muffin tin.
  • Bake for approximately 20 minutes or until muffins have risen.  Allow to cool.
  • Enjoy!

  • 2 cups all-purpose flour

  • 4 teaspoons baking powder
  • 1 tablespoons white sugar
  • 2 eggs substitutes
  • 1 1/2 cups warm milk 2%
  • 1/4 cup olive oil
  • 1 teaspoon vanilla extract

Instructions

  • Preheat waffle iron to the desired temperature
  • In a large bowl, mix dry ingredients flour, salt, baking powder and sugar;
  • set aside
  • Whisk eggs
  • Stir in warm almond milk
  • Add olive oil
  • Add vanilla
  • Pour the milk mixture into the flour mixture
  • beat until blended
  • Ladle the batter into a preheated waffle iron
  • Cook the waffles until golden and crisp
  • Serve immediately
