LIVING LIFE WELL
The importance of Consistency; why we need to stay on Track. This phrase is key in Living Life Well… As a diabetic I hear it all the time and am in constant pursuit. I claim a well lived life through a healthy lifestyle. Being diabetic for several years now, I chuckled realizing that one aspect of a healthy lifestyle now comes naturally. I don’t have to think about what to eat or if it’s in my diet. I don’t have a problem with knowing what foods are good for me and I don’t even consider those that are not. When you are diabetic it’s easy to give in to those little things, but we must keep a strong mind and a willingness to do better for ourselves. My faith has been that one constant stabilizer for keeping a positive mind set. I feel a sense of accomplishment and am humbled to have many who have helped me along this journey. The Diligent Diabetic website and blog are not about striving to be perfect; it’s about encouraging others to never give up. I encourage all who are diabetic and your support team to take it one day at a time.
CRANBERRY, PEAR AND ROASTED WALNUT MUFFINS
Cranberry Muffins
Ingredients
- 3 Cups old fashioned rolled oats
- 2 Cups of Whole Wheat Flour
- 1 Cup Light Brown Sugar
- 1 Cup Low-Fat milk
- 1 Cup Applesauce
- 2 Eggs
- 1/2 Tablespoon Baking Soda
- 1/2 Tablespoon Baking Powder
- 1 teaspoons Vanilla Extract
- 1 teaspoon Salt
- 2 Cups Fresh pears diced
- 3/4 Cup Dried Cranberries
- 3/4 Cup Roasted Walnuts
Instructions
- Preheat oven to 375.
- Prepare muffin tins with liners.
- Combine oats and milk in a bowl.
- Let stand for 10-15 minutes.
- Add the rest of the ingredients to the mixture.
- Fold in. Avoid over mixing.
- Refrigerate batter for 30 minutes.
- When ready to bake remove batter from refrigerator and fill muffin tin.
- Bake for approximately 20 minutes or until muffins have risen. Allow to cool.
- Enjoy!
RESPONSE IS CRUTIAL
It’s something how we experience a life-changing event, like a (Type 2) diabetes diagnosis was for me. It’s quite another thing when we have to practice what we preach; walk the talk and experience just how life-changing this event really is. We have a choice as to how we’ll respond. Either with humility and compassion or with bitterness and anger.
Sometimes we get stuck and overwhelmed. It’s very important to keep a clear mind, be aware of your strengths and those things that make us look back. Do Not Look Back…. Go Forward, Always Forward.
